Alien Rice

My daughter Gianna is a very active child, she loves to dress up and play pretend pretty much all day, that includes even when she eats and as much as i love the fact that she has a great imagination, it really annoys me to see her play with her food. I'm sure am not the only one with that problem here....Right?

I guess i can't complain, as long as it's not mushroom or spinach she could eat pretty much everything, she likes vegetables, salads, she even eats onions.
The point is that, the more boring the food is the most she is going to play with it and avoid eating it, meaning that i have to constantly come out with ideas and disguises for those type of ingredients that i know she wouldn't eat if i were to leave them on her sight. Did i mention before how i really dislike to cook?

So that's why when i first heard about this recipe i loved it, cause it was so easy to make and when i tasted it i loved it even more.

I call it "Alien Rice" because of the distinctive green color that it has.
If your child is a picky eater or if you simply want to try something yummy and fun with your little one and at the same time spark their imagination then this recipe is for you.

I told my little one that a momma Alien sent it to me, that it was her baby alien's favorite food and since she loves space stories and all related to that subject she was in awe and excited about giving it a try, even until today she still asks me questions about how the whole conversation with momma alien went and i continue to not let her know she has been eating spinach all this time.

Alien Rice

Ingredients:

1 cup of Basmati Rice (you could probably do it with any other rice but i prefer this one cause it doesn't get sticky and it's really good)

1/2 bag of spinach

2 cups of water

Salt

Diced Onion

Garlic

Olive Oil

Preparation:

Mix the spinach and 2 cups of water on a blender and set it aside.

Cook the diced onions with the olive oil on a medium frying pan until they become clear.
Add the cup of basmati rice and mix.
Sprinkle the desire amount of garlic powder and mix again.
Once the rice starts to look a little golden, pour the spinach water and mix one more time.
Lower the heat and let it cook until it the water dries.
Remove from heat and place the whole rice on a Pyrex or baking pan.
Sprinkle some Mozzarella cheese and place it in the oven or at least 15 minutes on 375°F.
